Sometimes on Sundays, we like to pretend to have our shit together. What says domestic goddess more than throwing on an apron, and getting out a rolling pin and a pie pan? Pretty much nothing babes!
Whether you’re trying to impress a Bumble date, genuinely want to do something nice for a friend, or are just in it for the Insta pics, you won’t regret giving this strawberry pie a chance this summer.
Here’s what you will need:
For The Flakiest Crust:
- 3 cups all purpose flour
- 2 1/2 teaspoons of sugar
- 3/4 teaspoon salt
- 1/2 cup coconut oil
- 1 1/4 sticks) unsalted butter, cut into pieces
- 1/2 cup ice water
Combine the flour, sugar and salt in your food processor. Then add the coconut oil and butter a little bit at a time, pulsing the processor, until a mealy texture forms. Blend in the cold water slowly until moist clumps form.
Gather your dough into a ball, and cut it in half.
Flatten each half, and then wrap them in plastic; and refrigerate for about an hour. Let your dough soften slightly before rolling it out.
For The Sweetest Summer Filling:
- 1 16-ounce container strawberries (cut the tops off)
- 1 package blueberries
- 1/2 cup (packed) brown sugar
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg yolk beaten to blend with 1 teaspoon water (for glaze)
Once you remove the dough from the fridge, preheat your oven to 400°F. Combine the first 7 ingredients in a large bowl, and mix gently to blend.
Roll out half of the dough on a floured counter, and then press into your pie pan, trimming the excess dough from the edges. Then, roll out the second half of the dough on your floured surface, and cut into strips.
Spoon the filling into crust. Arrange your dough strips atop the filling, spacing evenly, and form a lattice by placing the remaining dough strips in the opposite direction. Trim the ends of the strips even to be even with the bottom crust, and press to seal. Brush your egg glaze over crust, put the pie in the oven. After baking for 20 minutes, reduce the oven temperature to 350°F and bake you pie until golden for about 1 hour.
Transfer the pie to a rack and cool completely. Dust with powdered sugar and enjoy!
