Last weekend, I was craving something sweet but didn’t feel like leaving my house or paying an insane amount of money to get dessert delivered. As I searched through my fridge to see what I could possibly make to satisfy my sweet tooth, I realized I had the perfect ingredients to make a rustic strawberry pie: fresh strawberries and frozen puff pastry.

This dessert is easy to make and it’ll have your entire home smelling like a bakery. If you’re feeling #extra, serve it with powdered sugar, almonds and vanilla ice cream!
Ingredients
- 1 sheet of thawed puff pastry
- 2 cups fresh strawberries, with stems removed and sliced in half (lengthwise)
- 3 tbsp granulated sugar
- 1 tsp orange-flavored liqueur
- 2 tsp orange juice
- 1/2 tsp vanilla extract
- 1 egg, beaten, for egg wash
Instructions
Preheat the oven to 400°F. Line with a baking sheet with parchment paper. Place your puff pastry sheet onto the baking sheet.

Add the strawberries to a medium bowl. Sprinkle the sugar, along with the orange liqueur, orange juice and vanilla extract. Use a spoon to toss the strawberries in this mixture until they’re all completely coated. Let them marinate inside of your refrigerator for 15 minutes.
Place the marinated strawberry halves face down in the center of the puff pastry sheet. Leave a 1.5″ border along dough. Once all the strawberries are arranged, grab the edges of the puff pastry and fold them inward to partially cover the strawberry filling. Brush the dough with the beaten egg. Bake the rustic pie for 20-22 minutes, until the filling begins to bubble and the pastry is completely golden. Allow the pie to completely cool before serving.
