Local health and fitness expert, Mark Berger, 😜 shared one of his favorite healthy recipes with us this week. These black bean “bergers” are inexpensive and easy to make, taste great, and are super healthy!
Ingredients
- 1 cup of lentils
- 3 1/2 cups of water
- 1 onion diced
- 3 cloves of garlic or two teaspoons of minced
- 3/4 cup fine chopped walnuts
- 2 cups of quick oats or gluten free bread crumbs
- 1/2 cup of ground flax seed
- nutritional yeast
- 1 can of black beans rinsed
- 1-2 cups of chopped spinach
- 2 tablespoons of olive oil
- 3 table spoons of vinegar
- salt
- pepper
- tony chacheres
- garlic salt
Instructions
Cook the lentils in water with 1/4 of the onion and a little tony’s for 35 minutes until they soak up all the water. While the lentils are cooking, combine walnuts, oatmeal, nutritional yeast, flaxseed, salt, and pepper in a bowl.
Sauté the remaining onion, garlic, garlic salt, and spinach in olive oil for 8-10 minutes covered and stirring regularly.
When the lentils are done take off heat and add the vinegar to the lentils and a little more garlic salt and stir/ mash until it is like a paste. In a large mixing bowl combine lentils, sautéd veggies and beans, and dry mix in one bowl and stir until it is all mixed together. Make patties with hands. On a non stick grill pan, do 5 minutes on each side on a medium heat.
We served ours on a large piece of iceberg lettuce like a lettuce wrap, topped with a greek yogurt tzatziki style sauce (yogurt, lemon, evoo, dill, & pepper). They are going to make a delicious summer meal this week, and we will have no regrets after!
