Easy Chocolate Chip Banana Bread Muffins

This is our favorite thing to throw together when we’ve got a few over ripened bananas leftover from the week! We like to make this simple banana bread in a muffin tin instead of a loaf pan to have easy to eat and share muffins. These are so yummy and moist from the greek yogurt! Plus, they have fruit so they are healthy, right? Enjoy!

Ingredients

  • 3-4 Bananas
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 cup brown sugar
  • 1 egg
  • 1 cup greek yogurt
  • 1 teaspoon vanilla
  • 1 cup chocolate chips
  • Powdered sugar

Instructions

Preheat the oven to 350 degrees.

Peel your bananas and add them to a mixing bowl. Smash them up using a fork, then add the brown sugar, egg, greek yogurt and vanilla.

Mix all of these ingredients together.

In a separate mixing bowl, combine the flour, baking powder and salt. Then, gradually add your flour mixture to the banana mixture and stir.

Add the chocolate chips to your batter and fold in. Spray your muffin tin with cooking oil, and distribute the batter evenly into the holes.

Place them in the oven and bake for 30 – 45 minutes until you can stick a fork or toothpick in and it comes out clean. Voila! Dust with powered sugar and let cool for a few minutes, then remove them from the tin, and enjoy warm.
